I found the sparkling drink does wonders for Frosting. Last year, I introduced our champagne buttercream lavished on layers of white chocolate cake with raspberry filling. It was a hit and destined to be more than a fad... I hope.<br />

I love my customers and have been blessed to meet some friendly and wonderful people over the years. Lisa was no exception. When she called me to create a special cake for her daughter Sarah's bridal shower, I was glad to do it. And then she asked me to create something with a vintage look to it. I was thrilled! <br />

I delivered the cake to the Collonade in Scranton, PA. This beautiful venue was the perfect backdrop for the cake, served on a vintage stand that I picked up not too long ago and adore. <br />

I want to put a plug in for creative Moms. I know not every Mom can, or wants to, take all the time and energy to make decorations, DIY banners and game ideas. And that is fine. Kids are happy with whatever; a slice of pizza, a balloon, and call it a day. But there are those of us who enjoy the process of creating something special and going the extra mile to make moments for our family. I think Steph is one of those. I love all the thought that went into each and every detail. She didn't have to break the bank and hire a real live Tinkerbell. (I think one of her nieces showed up as Tink anyway). Instead, she used the budget she had and a whole lot of ingenuity and fun to make never never land come to life in her backyard! I was so impressed by all the thought that went into it and the fun she created that I had to share it with you. The pictures were taken by Stephanie or her husband. I am hopeful that I can do better in the future, and to make it up to all my readers (all five of you?), I am giving you a recipe!<br /><br />I created this recipe out of necessity for something healthy but yummy. I admit, it was also due to my recent craving for peaches. :) <br /><br />Enjoy!<br /><br />Peach Coffee Cake <br /><br />3 cups organic whole wheat pastry flour<br />1 1/2 cups organic pure cane, all-purpose sugar<br />3 1/2 tsp. baking powder<br />1 tsp. salt<br />1 tsp. cinnamon<br />1 tsp. nutmeg<br />1/2 tsp. ginger<br />1 cup (2 sticks) organic butter, room temp.<br />1 cup organic buttermilk (if not available use organic milk and 1 tbsp. vinegar)<br />1 organic (free range) egg, beaten<br />1 bag sliced organic frozen peaches (or 3 organic peaches, peeled, cored and sliced.<br />1/4 cup organic whole wheat pastry flour (to be mixed with Peaches) <br /><br />Heat oven to 370. Grease a 9 x 13 pan. Mix first seven (dry) ingredients with a wooden spoon in a bowl with a wooden spoon. Cut in butter and then using a pastry tool or your hands, blend until mixture looks crumbly. Toss frozen peach slices with 1/4 cup flour in a separate bowl. So far, Frosted customers have been the BEST! :) Celebrating Thanksgiving with my own family yesterday was one more chance for me to reflect on all I am thankful for. I am certainly grateful for my customers.<br /><br />A few months ago, a very pleasant woman ordered a cake for her daughter's baby shower. I enjoyed chatting with her and couldn't wait to create something special and personal for her daughter and the little boy they were all waiting for. <br /><br />I got a little lost going to her home but soon I was on the phone with my client. She patiently directed me and stayed on the phone until I made it to their driveway. I hung up and made my way up a birch lined drive. <br /><br />The grandest house I have ever seen welcomed me at the end. A stunning woman who I found out was the face behind the voice I had talked to, walked out to greet me and welcomed me graciously into her home. Her son helped carry in some of my things and I chatted with the housekeeper and friends of the family as I set up everything in their state of the art kitchen.<br /><br />The Mom to Be was gorgeous and so kind. I left their home a little at loss for words.<br /><br />I guess I have been a little judging of people who have money. I considered them to be snobbish and rude. This family has blown that opinion away. They are not only kind, but generous and hospitable people. I was so honored to be able to make this cake and be a part of their celebration of this little life. He will be a very blessed child, not because of WHAT he has in his life, but WHO.<br /><br />I also have received calls in the past couple weeks from two husbands who wanted to surprise their wives with cakes. They were so specific and each wanted to be sure that I matched their wives 'style'. I love being part of something like that. I could bake every day and never grow tired of it. <br /><br />I had bananas that were beginning to take on a peculiar look (you know what I mean - that point at which the children would say 'gross' if you offered it to them). But I knew they would be perfect for baking. I had enough for banana bread (my favorite and oldest recipe) and some to spare. <br /><br />Then I remembered a cookie recipe I saw online earlier this week. The riper the bananas are, the more flavor they have. <br /><br />Ingredients:<br />2 1/2 cups all-purpose flour<br />2 tsp. baking powder<br />1/2 tsp. salt<br />1/4 tsp. baking soda<br />1 cup white sugar<br />2/3 cup butter, softened<br />2 eggs<br />1 tsp vanilla extract<br />1 cup mashed bananas (3 medium)<br />1 12 oz. bag semisweet chocolate chips<br /><br />Directions:<br />Preheat oven to 400 F. Lightly grease cookie sheets. (I used silpat liners for my cookie sheets and the cookies were perfectly done. I think parchment would work great too). <br /><br />Sift the flour, baking powder, salt and baking soda together in a bowl. Set aside.<br /><br />Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas. Add the flour mixture, and stir just until combined. Stir in the chocolate chips. Drop by spoonfuls onto prepared cookie sheet.<br /><br />Bake in preheated oven for 12 minutes or until tops are brown and cookies are done. You are never too young to love CAKE!Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-1464505729435567230.post-46983179605980559922011-07-07T05:50:00.000-07:002011-07-07T05:52:56.752-07:00Why Does a Wedding Cake Cost So Much?I recently found this article by Melissa Capyk, Designer and Owner of WildCakes.ca in <br />Brantford, Ontario:<br /><br />"It’s just flour and sugar, right?<br /><br />Not quite.<br /><br />There is a huge range of things that go into creating your nuptial confection, the ingredients being only a small part of that but lets start there.<br /><br />In a “standard 3-tier, serves 120-150” cake, there can be as many as a dozen eggs, 5 pounds of pastry flour, half a cup of real vanilla, several pounds of unsalted butter,several bars of premium chocolate, and more! The frosting may contain 3 or 4 more pounds of unsalted butter, another dozen or more egg whites, and several pounds of sugar. If you have a fondant covering, add about 5-8 pounds of that.<br /><br />Now you need equipment. While some of the basics are in nearly every kitchen, not many home bakers have a set of tiered cake pans ranging from 6” to 18” (depending on your cake) and an oven that will fit the larger pans, a heavy-duty stand mixer, professional grade food colours, piping bags and tips, a rolling pin that can roll out a 2 foot diameter circle of fondant, and more. Depending on the design of your cake, there can be hundreds of dollars of specialized tools and molds required. There are boards and boxes to safely deliver your cake and a vehicle large enough to securely transport your masterpiece.<br /><br />In addition, there is the cake artist’s time to bake and create your masterpiece, her (or his) experience, and potentially thousands of dollars and countless hours in workshops, training courses, and conferences spent honing her craft.<br /><br />You are paying for her baking experience in using recipes that are tasty but can stand up to being stacked and shaped, structural engineering of the support systems (that need to be there whether your cake is pillared or not), artistry in decorating, sculpting skills in creating a topper or flowers, expert delivery and repairs of any mishaps that may happen along the way, and more.<br />A note about delivery: one of the most risky “cost-saving” ideas I’ve seen is to decline to pay for your cake artist to deliver your cake. She knows how to transport it safely and how to repair any minor damage that may occur. If your cake is pillared, or more than 3 tiers high, delivery is essential, but even for smaller cakes, it can be critical.<br /><br />Your wedding cake may have included a tasting session, the creation of a custom design (or modification of an existing one) that suits your needs and taste. Your cake artist may also have the expenses of a storefront, a web site, and various bridal shows to ensure you can find her!<br /><br />Consider also that even the simplest wedding cakes usually take 6-10 hours of time and that more elaborate or difficult designs can take hundreds of hours, it’s a wonder that a wedding cake isn’t much more expensive. I said a prayer that I wouldn't see anyone I know. I kicked myself for leaving my big black shades in my car. "How fast can I grab this and leave?" I thought. <br /><br />I found a few items I needed for home and then made my way to the baking aisle. There it was... the notorious BOXED MIX. <br /><br /><gasp>! (I know, I know... shocking, isn't it?) <br /><br />Please don't hold it against me, I shall explain.<br /><br />Hours earlier, there I was at home, minding my own business and surfing the internet looking at baking websites. One site had advertisements and recipe links on the side. Suddenly, one caught my eye. "Pumpkin Gooey Butter Cake." I see "gooey" and I think "yummy". :) Also, how can anything made with butter taste bad? I scanned the recipe and read the reviews, noting that the result would mean a blend of textures and flavors all around a favorite theme of pumpkin. "Could I?... Would I?... Dare I?" I thought as I saw that the base for the recipe was the notorious box mix. <br />The result according to the reviews seemed very worth it.<br /><br />"I won't be selling this through my business" I told myself.<br /><br />"I am just making something fast and easy and delicious for my family." <br /><br />"If it doesn't turn out, I can certainly blame it on the boxed mix." :) Finally convinced, I made it to the store.<br /><br />At the checkout I was shocked to see Mary, a woman I know from my church helping to bag my items. There was no where to run, no where to hide. I finished checking out, smiled and thanked her and ran.<br /><br />"This better be worth it." I thought.<br /><br />IT WAS!!! A similar texture to pumpkin pie with a cake-y crust. PERFECT with whipped cream. Preheat oven to 350 degrees F. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9- inch baking pan. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 50 - 55 minutes. (The recipe said 40-50 min. but I did 55 min. and the cake was perfect!) Just make sure not to overbake as the center should be a little gooey. I have been enamored by English Royalty and naturally was quite interested in hearing what cake the heir to the throne and his bride to be will choose. I can't imagine being the baker who will have the overwhelming job of creating the cake for the future king and queen of England. The news is out that famed Fiona Cairns bakery of London will have the honor. I've already scoped out the <a href="http://www.fionacairns.com/">Fiona Cairns web site</a> and was delighted. I'm sure their server is under threat of crashing as the eyes of the world turn to London and are surfing the internet on the hunt for any news on the details of the wedding of the decade. <br /><br />News reports have Kate choosing traditional fruit cake, soaked and aged in brandy. It was so humbling. I hung up and felt overwhelmed by it because the whole time I was thinking "I want to thank YOU." Everything in our culture seems to point to our wants, our opinions, agendas and what we need at the moment. In such self focus, we often lose appreciation for others and gratefulness is rare.<br /><br />Thank You. Just two little words, but they mean a lot. When was the last time you thanked someone? <br /><br />With Thanksgiving right around the corner, I wonder if it would be a good idea to take these coming weeks and reflect on all we are thankful for. Maybe try to change our perspective. See the good and positive things in our life and stop taking people we say we love for granted.<br /><br />When this bride called me, it took me by surprise. I didn't expect it. After all, I was a vendor. She hired me. But she said thanks. It beconed me with the name and the strange picture of a woman hiding behind beautiful hat boxes. <br /><br />Looking for another good summer read, I decided to try it out.<br /><br />Also, on the inside flap was a card that had been inserted. It read: In Memory of Doris Winters. Given by Sonia and Carroll. I love that. If a park bench has a plaque on it that reads "In Memory of..." I will often pause for a moment as I pass it by. I took the book in part because of the "In Memory of".<br /><br />But I digress...<br /><br />Eat Cake began with a wonderful chapter. I was pulled in right away. <br />"Cakes have gotten a bad rap. People equate virtue with turning down dessert. there is always one person at the table who holds up her hand when I serve the cake. No, really, I couldn't, she says, and then gives her flat stomach a conspiratorial little pat. Everyone who is pressing a fork into that first tender layer looks at the person who declined the plate, and they all think, That person is better is than I am. That person has discipline. But that isn't a person whtih discipline, that is a person who has competely lost touch with joy."<br /><br />It is the story of how the main character "Ruth" had her life saved by cake. Ruth finds herself surrounded by dysfunctional family members and needs to save her family and herself.<br /><br />The first few chapers were well written and I liked the way the author created each character so independently yet each relying on the other characters to be able to come alive to us, the reader. One negative thing I have to say, is that the book hits a lull in the middle chapters as page upon page contains dialogue between dysfunctional family members.<br />I was so over it, I almost quit the book.<br />Not only did i find those portions un-funny, I found it to compound my own stress about my real life dysfunctional family.<br />Really people, isn't fiction supposed to be an escape for us from real life? But the writing was still well done and characters are colorful and varied. If you get a kick out of watching an old lady spew out bitterness against an injured old man who can't even pee himself, then by all means, go right out and get a copy. <br /><br />All that being said, I found that when I had about had it and was going to quit reading 3/4 of the way through, the book suddenly redeemed itself. With the introduction of a new character, the story line takes a turn for the better. I really enjoyed the last several chapters and was glad for the happy ending.<br /><br />Best of all, the cake includes recipes!! Throughout the story, the main character, Ruth, bakes cakes. Several of her recipes are included in the back of the book. (score!) <br /><br />One of the cakes she makes is called The Scarlet Empress. I was intrigued. It sounds A-MAZING. Unfortunately, the recipe was not included, but I found it easily <a href="http://www.foodmayhem.com/2009/01/scarlet-empress.html">online</a>. It appeared in Rose Levey Bernenbaum's The Cake Bible. I can't wait to create my own Scarlett Empress!<br /><br />Nicely done, Ms. Ray! This includes the bible, cook books and baking how to books, food magazines, books on parenting, marriage and other books that help or enhance where I am at in life. The house was quiet. The bowl of icing was right there on the counter, ready to go, and cakes are best when just out of the oven, and I really couldn't possibly wait, so I reached to the side of the cake pan, to the least obvious part, and pulled off a small warm spongy chunk of deep gold. Iced it all over with chocolate. Popped the whole thing into my mouth."<br /><br />I loved Bender's descriptions. Her words came alive and I was there in the kitchen with the nine year old character. I bought the book and have looked forward to my moments of reading before bed time. <br /><br />My own days are filled with baking, so a book with a story about food enchanted me. I found the book to be relatively clean. That is to say, no sordid sex tales or violence. No horrific human behavior. I felt myself pulled into the tale woven in the pages and hanging on to find out if the mystery of the main character would be revealed.<br /><br />But, I will warn any would-be readers that you may get sucked into a seemingly normal story with a normal family who just happens to have some abnormal abilities. And then *Bam* 3/4 of the way through the book the author hits you with a scene like something out of a sci-fi film. I have to say, that if I had read that chapter in the beginning I wouldn't have finished the story, because I would have been too weirded out. (I prefer more realistic or idealistic interpretations of life in fiction.) But because I was already engrossed in the character and the story itself and because of an unquenchable curiosity to see how the story would find resolution on the pages ahead, I pushed past my uncomfortable shock and read on. <br /><br />The last few chapters of the book offered some resolution. But it didn't have the ending I would have liked. I analyzed this for a bit after I finished the book. Perhaps I would not be happy with any ending. I guess I don't like endings.<br /><br />Cakes come to an end. A rather swift end, I must add. The crumbly cake texture with a flaky sugary coating. <br /><br />Maybe it was the recipe. It seemed easy enough and I had all the ingredients.<br /><br />But whatever the reason, I began to have a sudden craving for chocolate glazed donut holes. And who said donuts had to be for breakfast anyway? They are just deep fried cake, ya know. ;) <br /><br />I usually don't need an excuse to bake. A small while later, we coated them in the sugar glaze and let them set. <br /><br />If you have yourself a deep fryer, try the recipe:<br />(found at smittenkitchen.com)<br /><br />Chocolate Donut Holes<br /><br />Yield: 4 dozen 1.5-inch holes. You can half the recipe and used a 1.25-inch cutter to make a little over 2 dozen. <br /><br />2 3/4 cups (12 3/8 ounces or 352 grams) all-purpose flour<br />1 cup (3 ounces or 90 grams) unsweetened Dutch-process cocoa<br />2 teaspoons (about 3/8 ounce or 10 grams) baking powder<br />1/2 teaspoon (about 1/8 ounces or 4 grams) salt<br />4 large eggs<br />1 1/2 (10 5/8 ounces or 300 grams) cups sugar<br />1/3 cup (2 7/8 ounce or 84 grams) sour cream or buttermilk (what I used)<br />3 tablespoons (1 1/2 ounces or 42 grams) butter, melted and cooled a bit<br />Your fat of choice for frying (solid vegetable shortening or canola, peanut or vegetable oil are popular choices)<br /><br />Whisk flour, cocoa, baking powder and salt together in a large bowl. In a medium one, whisk eggs, sugar, sour cream or buttermilk and butter. Stir wet ingredients into dry until well blended. Chill batter until cold, at least 1 hour and up to 3. (I put it in the freezer for 20-30 minutes and it worked just fine.)<br /><br />Flour your counter generously and scrape dough onto it. Flour dough. Flour your hands. Gently pat or roll dough out until it is 1/2-inch thick. Dip a 1 1/4 to 1 1/2-inch round cutter into a dish of flour and cut rounds from dough. Pat scraps of dough together and roll or smooth with floured hands to a 1/2 inch thickness and cut them again. If your dough or doughnut holes have gotten too soft to easily pick up, put them on a floured or parchment or waxed paper-lined tray and put them in the freezer for a few minutes, until they’re firm enough to gently handle again.<br /><br />Prepare your fryer or fill a 5 to 6-quart with 4 inches of oil. Heat to 375°F (190°C). You can fry 6 to 12 doughnut holes at a time, about one full minute on each side. The trickiest parts will be visualizing when the doughnuts are done — since they’re chocolate, the color change will be subtle; I suggest practicing with scraps of extra dough first — and keeping your oil at an even temperature, if you’re not using a deep-fryer. Make sure you bring the oil back to 375°F after each batch.<br /><br />Drain doughnut holes on a stack of paper towels. And it's on a much younger blogger. <br /><br />I couldn't believe it when I stumbled on it the other day... <br /><br />The <a href="http://whisk-kid.blogspot.com/">Whisk Kid</a> marries her love of baking and writing with her love of photography. She is charming and funny. She mixes it up with sentiment and then practical tips and oh-so-yummy recipes. Yes, recipes! She publishes the best recipes with AMAZING pictures of her baked creations. <br /><br />ahhhh... I am drooling just thinking about it.<br /><br />I could keep the <a href="http://whisk-kid.blogspot.com/">Whisk Kid</a> to myself. I have been known to be possessive of certain things (close friends, my own original recipes etc.) <br /><br />But, I am also generous. I love to share cake. I love to share time with others, and to offer a hand. And I love to share a bit of happiness along the way. <br /><br />Consider the whisk kid your bit of happiness for today. At 19 years old, I think she is a baking blog genius!<br /><br />What I love most about her is that her recipes aren't just a two step process. I'm in love with the art of baking from scratch, and she is mastering the art. My companions in the kitch now are heavy duty mixers, old - very old - cookbooks. I love wooden spoons and flour sifters. I love the whole baking process and taking a short cut may take some of the joy out of it for me. <br /><br />I think <a href="http://whisk-kid.blogspot.com/">Whisk Kid</a> feels the same way. Perhaps, in that way, she is a baking kindred spirit. <br /><br />I have her strawberry rubarb pie recipe in the oven now.
